Croix & Courbet is the shared project of two longtime friends: David Croix, the man behind Beaune’s Domaine des Croix, and Damien Courbet, whose family domaine in Nevy-sur-Seille dates back to 1869. The pair first met as oenology students in Dijon, but it wasn’t until 2019 that their Jura venture took shape. With quality grape contracts becoming harder to secure, Damien told David it was now or never. Since then, the project has grown vintage by vintage, welcoming a trusted Château-Chalon grower in 2022 and adding new cuvées along the way. The philosophy remains simple: organically grown fruit, native yeast fermentations and sulphur kept to a bare minimum. All the wines are made in the topped-up, or ouillé, style, preserving freshness rather than developing the nutty character of Savagnin aged sous voile. Expect purity, tension and Jura personality, shaped by a Burgundian eye for precision. The 2023 release comprises five whites, offering plenty of scope to explore both Chardonnay and Savagnin. Savadonnay brings the two varieties together, its playful name nodding to the French expression ça va donner. Alongside it are the single-vineyard Calvaire Chardonnay, the Côtes du Jura Savagnin and two single-site Savagnins: En Chemenot from Arbois and En Beaumont from the Côtes du Jura.
