Bringing the citrus-laden Animus Macedon Dry Gin together in a slightly longer version of a Southside, with a refreshing cucumber twist.

30ml Animus Macedon Dry Gin
15ml lime juice
15ml simple syrup
3 cucumber slices
60ml soda water
Dash of Angostura Bitters

Muddle cucumber in a cocktail shaker. Add ice, Gin, lime juice, syrup and bitters. Shake and double-strain into a coupe. Top with soda water and garnish with a thin slice of cucumber.
