Ramos Gin Fizz

With its massive botanical load, the very unique, unsweetened, 1840s recipe Jensens Old Tom can deal with the myriad of flavours and textures this recipe throws at it. Jump in.

60 ml Jensens Old Tom Gin
15 ml lemon juice
15 ml lime juice
20 ml sugar syrup
3 drops orange blossom water
3 drops vanilla extract
1 egg white
20 ml half-n-half
Soda water

Combine all ingredients except the soda water in a cocktail tin with ice. Shake vigorously, then strain two-thirds back into a dry cocktail shaker and shake. Pour the mix and the soda into a collins glass at the same time. It will expand like a spider or float. Allow the drink to settle for one minute before topping with the remaining third of the cocktail mix.
