Another of Beaune’s greatest terroirs, David Croix farms just 0.30 hectares in Les Grèves. Jasper Morris MW (Inside Burgundy) refers to this vineyard as “absolutely the heartland of Beaune”, and it typically produces the appellation’s deepest and most long-lived wines. Croix’s parcel, planted in 1968, has been farmed organically for over a decade. The vines lie just next to the Vigne de l’Enfant Jésus—widely considered the best location on the slope—on brown clay soils with gravel (grèzes litées). Vinified with 50% whole bunches, the wine was aged without the use of new oak.
