Saca of March 2015, 15% alc, Rey Fernando de Castilla, Jerez de la Frontera. This particularly rare, single-cask bottling was drawn from one of the solitary butts of Pedro Ximénez Viejísimo at Rey Fernando de Castilla, that the Equipo Navazos immediately fell in love with when they first tasted it. It is therefore a one-off offering and extremely limited. While its average age is hard to determine, Navazos' conservative estimate places it to be “well above forty years” (Gutiérrez's note below puts it considerably higher). This is a brilliant wine, both deep, powerful and luscious but at the same time savoury, complex and remarkable vibrant and fresh. From a barrel that was always marked “Bota NO” at the bodega—which means “do not touch this, as it's too special”, this is indeed something remarkable. For PX fans, this is manna from heaven.

“The Navazos guys are not that keen on ultra sweet wines, but their customers love them, and I must admit, the NV La Bota de Pedro Ximénez Viejísimo 56 Bota NO is truly superb. It is thought to be around 70 years old, during which time it aged and concentrated in a solera. It boasts 15% alcohol and 400 grams of sugar. It has a very Jerez profile, with aromas of toffee, chocolate, raisins, dates, and a milky hint with a dense palate, quite sweet, keeping the freshness and balance. It's fragrant and open, and develops some aromas of hazelnuts. The single cask of wine was transferred to 750 bottles in October 2014.”
