The rosé is 100% Grenache sourced from the wonderful Eugenio Valenti’s family estate, Vino Italia. The hand-harvested fruit lands in impeccable condition. It spends a short spell on skins before being basket-pressed straight to amphora for fermentation and malolactic conversion. The wine then spends a brief time on lees in barrel before blending in a large concrete egg (called Bacon). Then, it is simply racked to bottle with just a touch of sulphur.
