This delightful aperitif-style wines shows just why this region is so well loved for traditional method sparkling. The blend is 80% Pinot and 20% Chardonnay (mostly from the '24 vintage), picked slightly later for a flavour-filled style on release.
It was whole bunch pressed, nice and slow with a cool tank ferment. The chardonnay went through MLF in tank to bring some texture to complement the Pinot's lively acidity. After assemblage, the wine spent 14 months on lees and was disgorged with 4g/L dosage.
