2021 Augustus Greenock Shiraz comes from a single hillside vineyard on the family's Greenock property, planted at 350m in red-brown earth over friable red clay and calcareous subsoil that keeps yields low and roots deep. Hand-picked in early March, the fruit was fully de-stemmed and crushed, then fermented and macerated on skins for 20 days with twice-daily hand plunging before basket pressing and unfined, unfiltered maturation across 24 months in a mix of new and seasoned French and American oak hogsheads. The result is inky and dense, with layered black cherry, plum and blueberry fruit joined by black olive, bay leaf and raspberry notes from the cooler vintage, framed by cedar and vanilla oak spice. On the palate it's medium-to-full bodied and brooding, with ripe fruit tannin and fine oak structure carrying a long finish.
