Hochkirch Blanc 2021

This year's blend came in at 95% Semillon and just five percent Sauvignon Blanc. The cooler year resulted in the fruit being picked at surprisingly low Baumé. The estate fruit was handpicked and 30% was left as whole bunches and the balance destemmed. The fruit rested on skins for five days and was then pressed to tank to complete natural fermentation. The wine was racked with fine lees into used 500L puncheons where it rested until the January post-harvest. The wine went through full malo and received no additions.
