Pinku is a Spanish-inspired rosé made from hand-harvested Tempranillo and Merlot grown on gravelly loam soils. A wet spring was followed by a long, warm summer, with bird pressure adding to the season’s vineyard challenges.
Whole-bunch pressing is combined with a little crushing to capture colour, while cool fermentation preserves freshness. The supplied winemaking notes describe concrete egg, barrel and chilled tank fermentation, followed by racking, blending and settling in tank before bottling.
