First made in 2009, L’Opiniâtre is Sébastien’s inaugural zero sulphur wine—something few producers were experimenting with at that time. As Sébastien says, he created this cuvée to prove that a great zero-sulphur Champagne was not only possible but could show purity and age effortlessly. This release is 100% Verzy Chardonnay from vines planted in clay, limestone and flint soils. The wine saw full malo, a 66-month élevage and zero dosage.
