Organic. 100% Cabernet Franc. Baudry’s irresistible rosé was traditionally drawn from vines rooted in the gravel terroir of Grézeaux and a parcel called Les Balais, which was originally planted by Matthieu’s father some 30 years ago. In contrast to Grézeaux, Les Balais is on clay and flint (silex) soils. More recently, to counter the warmer seasons, Baudry has introduced a vineyard sited high on the Chinon côteaux above his iconic Croix Boissée vineyard. The fruit from the flinty soils of this site now contributes 70% of the blend, bringing incisive cut and minerality to the fruit from the valley floor.

As always, the 2021 was picked by hand and made by the pressurage method, whereby the wine’s delicate colour comes from minimal skin contact in the press. The wine fermented (almost to dryness) via indigenous yeasts—two-thirds in Italian-made concrete tanks and the remainder in stainless steel. It was left on lees with no sulphur added.

Reviews

“With no skin contact, just pressing, the 2021 Rosé Chinon is a totally dry, firm and direct style leaving no compromise. Fermented in cement but left on lees with no sulphur added, there’s a hint of oxidative character. The nose presents a nutty, pastry note as well as dried apples alongside subtle red fruit. A savory, pale salmon-hued rosé with some phenolic firmness.”
90 points, Rebecca Gibb MW, Vinous
