From three sites within the valley - two in Relbia where Ricky enjoys that classic lemon/lime feel, and of course Three Wishes which always provides so much sunny flavour.
Nice long, slow & cold ferments. Ricky searched for a little extra edge with a component he left on skins for 24 hours prior to pressing aswell, giving a nice little pucker on the palate. As always, a tiny dash of residual sugar is left behind to help the acidity and fruit profile meet on the palate, this year 6.5g/L.
