This wine embodies the term ‘bespoke.’ The Waverley site is planted to three clones of Pinot Noir: Dijon 114 and 115, and an unknown clone which is late ripening with high acidity. The Dijon clones were harvested together, leaving the mystery clone to hang for another week. The Dijon clones see whole bunch ferments, whilst the mystery clone is entirely destemmed. The wine saw 11 months in seasoned French oak to finish things off. The attention to detail with each clone, and customised winemaking means this wine is anything but formulaic or generic. In the words of Tom Kline, this is a wine with a “burgundian sensibility” where the savoury intensity and elegant restraint are front and centre.
