“I always wanted to produce Gamay down here” Ricky says, “but there isn’t much grown, and nobody was selling any!” This was the launchpad for his own Gamay project, and this wine is the first ever release!
It comes from his Three Wishes vineyard in the Tamar Valley, blended with fruit from Bremley in the Coal River Valley. The Three Wishes fruit saw 100% whole-bunch “proper carbonic” ferment, whilst the Coal River Valley fruit got a more Pinot-like treatment, aiming for juiciness. It’s an exciting addition to Havilah’s line-up.
