One of the most exciting single-plot wines we ship from Spain, Pérez's Sancho Martín bottling was first produced in 2012 and comes from an isolated, old-vine plot in the vineyard of Espanillo. It’s one of the very highest sites in Bierzo, sitting at over 800 metres ASL! The name, La Vigne de Sancho Martín, refers to the area, or lieu-dit, of Espanillo where the vines are planted. This vineyard looks more like a quarry; it's incredibly stony, with the ancient (80+ years) vines protruding from a ‘soil’ of fragmented rocky schist. Pérez only gets no more than a tonne of fruit from these ancient vines. It’s mainly Mencía, but, as with most old plots of vines in Spain, it’s a field blend including some Tintorera and  Godello. Fermentation is 100% whole bunches and the wine spends 30 days on skins before being pressed to 600-litre demi-muids for malolactic and 12 months aging.
