Dormilona Clayface Cabernet Sauvignon 2025

Jo and Jim’s Yungarra site is the source for the Clayface Cabernet. Thanks to their efforts on these gravelly, loamy, limestone-rich soils, the well-established vines have firmly hit their stride. The fruit was hand-harvested and destemmed before fermenting in amphora pots, where it was plunged by hand till the cap dropped. After four months, the wine was basket-pressed back to the same vessel, where it rested for another month before being bottled directly from the pot by hand.
