Biodynamic. Dry. This is our second shipment of Weinbach’s Sylvaner, drawn from old vines in the Clos des Capucins. Sylvaner may have fallen down the Alsatian pecking order over the decades, but you could hardly tell that from tasting Weinbach’s example. Old, biodynamically tended vines and low yields are just two keys to the quality and style here. The fruit was gently pressed as whole clusters in pneumatic presses, then fermented with indigenous yeasts (an element of the terroir that enhances depth and complexity in the wines) in old oak vats.

Weinbach Alsace Sylvaner 2021

Reviews

“Very ripe quince nose, with fresh fruit and a hint of caramelised fruit. Excellent balance of ripeness and vitality, although the acidity is barely present in the foreground, only showing its hand at the long, wet-stone finish.”
92 points, Stuart Pigott, Jamessuckling.com
“The 2021 Sylvaner is from almost 70-year-old vines in the Clos des Capucins. The nose is subtle and has a hint of fresh white asparagus and a gentleness on the nose that is almost creamy lemon. The palate has that beautiful and gentle Sylvaner depth and echoes with notions of sun-warmed hay. Stunning depth and fine acidity make it stand out. Gorgeous.”
92 points, Anne Krebiehl MW, Vinous
