The former sits at 450 metres' altitude and has red clay over sandstone, quartz, and schist.\u003c\/p\u003e\u003cp\u003eEach parcel was direct-pressed in a slow cycle, and moved to barrel after settling. The wine took its time in the winery with a long, slow, natural ferment, and saw one winter on lees in barrel before racking into tank—with lees—for another winter. The lees acted as a protective layer to prevent oxidation and maintain great freshness in the wine.
