It comes from plots planted by their forefathers between 1947 and 1953, some on ungrafted vines, and successive generations have worked to preserve this heritage and the qualities of these old vines. In Chavot, Les Rouges Maisons and Les Monts Bougies sit on clay and silty soils with flint and small stones; in Mancy, Les Hautes Norgeailles has clay soils with a little silt. Both rest on chalky subsoils. Picked by hand when fully ripe and pressed traditionally, the wine is fermented in barrels with no malolactic fermentation, then aged on fine lees.
