In his Le Vignoble de Chavignol, Thibaut Boulay reminds us that at the Universal Exhibition in Paris in 1878, Comtesse was already considered a true star of the Sancerrois, its wines being served on the most renowned tables of northern France.

The soil composition is pure Kimmeridgian limestone and consists of a miserly 30 to 40-cm layer of topsoil over solid limestone bedrock. Its fickle, low-yielding nature—on average, it yields 35 to 40% less than Sauvignon Blanc—sealed its fate, and it is now found in very few vineyards. Luckily for us, the Goisots have persevered, and their old vines of Fié Gris today flourish in the rich, red and brown clay and limestone soils of the Côte de la Canne, Cornevin and Moury vineyards. Unlike the Sauvignon Blanc wines, this bottling was partly fermented and raised in old 500-litre barrels. It’s always one of Burgundy’s leftfield gems.

//cdn.shopify.com/s/files/1/0648/2575/3828/products/698e61f3-7fde-ed11-ab3d-0ac90280dbea_21949-750.png?v=1681902435
domaine-guilhem-j-hugues-goisot-saint-bris-la-ronce-blanc-2019
Domaine Goisot Saint-Bris La Ronce Blanc 2019

Biodynamic. Sauvignon Gris/Sauvignon Blanc. Today we offer our first two vintages of Goisot’s newest cuvée. It’s a field blend of the two Sauvignons, planted in the north-facing section of La Ronce (which qualifies for the Saint-Bris appellation). Guilhem planted the vines between 2012 and 2015 to craft an “old-style field blend like our grandparents used to make.” Fermented wild and raised in tank for 19 months, both wines are off-the-charts delicious. Some 10% of the juice is raised in earthenware amphoras, bringing a measure of savouriness that Guilhem appreciates, and plans to increase over the years.

//cdn.shopify.com/s/files/1/0648/2575/3828/products/e164745b-80de-ed11-ab3d-0ac90280dbea_21954-750.png?v=1681902457
clos-de-lecotard-saumur-blanc-2020-1500ml
Clos de l'Écotard Saumur Blanc 2020 (1500ml)

Organic.
