Natural fermentation with wild yeasts only. The first period of the élevage lasts almost one year, with the wine remaining on its fine lees. The composition comprises 50% from the 2006 vintage with 20% 2005, 20% 2004 and 10% 2003. The wines clarify slowly, as was once typical across the region. 20% of the wine is fermented in oak casks. Dosage is a low 3 to 4 grams per litre. It is the wine we order and receive the most of although demand still vastly outstrips supply.
