Vaillons is on the left bank of the Serein, just southwest of Chablis and on the mid-slope. The terroir is quite different from the Côte de Léchet, with more clay in the soil making for an elegant, rounder Chablis than the stony vim of Lechet. You don't have to look very hard to find the terroir in this wine, as the Defaix brothers manage to nail the character and personality of each Cru with seemingly effortless ease. In contrast to the wine below, this is a gentler wine, with the typical freshly churned butter character of the vineyard. If you take your Chablis in a seamless style with aromas of sea spray and peach, but with a mineral kick at the end then it looks like you've found your wine.
Outstanding. "(almost all Vaillons proper with a bit of Séchet). Here too there is a deft touch of wood surrounding the white orchard fruit and honeysuckle aromas that have glimpses of oyster shell poking through. The rich, forward and relatively generous flavours possess a seductive mouth feel and excellent complexity on the dry for the vintage finish. This should age well for the medium term."
