Year-in, year-out, Domaine Paul Pillot makes small amounts of very good Bourgogne Blanc and Rouge from sites within Chassagne and from Chagny and Remigny, on the edge Chassagne Montrachet in the Southern Côte de Beaune. In 2009, an exceptional year, the Pillots have really outdone themselves. The wines soar above their humble designation. The Chardonnay is deliciously punchy, very textural and has plenty of chalky minerality. The Pinot is bright, tangy, full of cherry fruit with the Chassagne personality really shining through. And they are bottled under Stelvin.

Both wines receive much the same kid-glove treatment as Pillot’s Chassagne cuveés: impeccable work in the vineyard (20-35 year old vines), hand-picking, extended maturation on lees, and judicious use of oak.
